Chocolate Cream Pops
Popsicles remind me of a childhood full of hot summer days spent running around in the backyard and swimming in the pool. Back then, I didn't like chocolate (it's a long story!) so I didn't enjoy those chocolate shell ice cream pops, but I absolutely loved the super sugary kind that you eat out of a plastic tube. Those were my jam. That is, until I got my tonsils removed and had to eat popsicles and ice cream for what seemed like forever during my recovery. What had once seemed like a fairytale - ice cream and popsicles for every meal - quickly turned into me growing tired of them altogether.
Flash forward to me now. While I wouldn't dare eat one of those super sugary tube pops these days, a nice and chocolatey cream pop sounds more my speed. Enter these delicious treats - chocolatey, sweet and oh so simple to make! These beauties take 5 ingredients and less than 5 minutes to prep. Perfect for a quick summer treat or simply satisfying your snacking sweet tooth. You really can't go wrong with these creamy, chocolatey pops.
So when all is said and done, you can prep these in the amount of time it took you to read this post. AND you most likely have all of the ingredients in your kitchen right now. So there really are no excuses, unless you just want to deprive yourself of summertime nostalgia. 3 cups almond milk
1 tbsp agave nectar
1 tsp cacao powder
¼ tsp pure vanilla extract
vegan chocolate chips, optional
Combine almond milk, agave nectar, cacao powder and vanilla extract in a blender or whisk by hand.
Pour into popsicle mold, insert sticks and freeze for at least 2 hours.
If desired, melt chocolate chips in a double boiler, stirring frequently. Remove bowl from heat and allow to cool a few minutes.
When ready to serve, remove popsicles from mold and drizzle with chocolate. The chocolate should freeze on contact and form a nicely drizzled shell.
